- 1 ½ tablespoons Coconut Flour
- 1 tablespoon Almond Flour
- 1 tablespoon Erythritol
- ½ teaspoon Baking Powder
- 1 teaspoon Lemon Zest
- 1 tablespoon Heavy Cream
- 1 tablespoon Unsweetened Almond Milk
- 1 tablespoon Lemon Juice
- 1 large Egg
Instructions
- In a small bowl add the coconut flour, almond flour, erythritol, baking powder, and lemon zest. Mix well.
- Add the remaining ingredients and mix until just combined.
- Grease a large microwave-safe mug, bowl or ramekin and pour in the batter.
- Microwave for 1-2 minutes, until the cake has risen and there is no raw batter visible.
- Serve warm topped with Keto Whipped Cream or Keto Vanilla Ice Cream, if desired.
