Keto Cauliflower Tots

You won’t miss potatoes with these delicious Keto Cauliflower Tots. They are crunchy on the outside, soft on the inside and super cheesy!

Ingredients

  • 10 ounces Cauliflower riced
  • ¾ cup Parmesan Cheese shredded
  • ¾ cup Mozzarella Cheese shredded
  • ¼ cup Coconut Flour
  • ½ teaspoon Salt
  • ¼ teaspoon White Pepper ground
  • 1 large Egg

Instructions

  1. Preheat your oven to 220C425F. Line a cookie sheet with parchment paper and set aside.
  2. Place the cauliflower into a microwave-safe container, add the water and microwave for 3-5 minutes, until cooked through. Allow to cool.
  3. When the cauliflower is cool enough to handle, place in a clean kitchen towel or cloth and give it a light squeeze to remove about half of the liquid.
  4. Place it into a mixing bowl along with the rest of the ingredients and mix well.
  5. Use a cookie scoop to measure out the mixture, then shape in your hands. Place onto your cookie sheet.
  6. Spray the tots with olive oil cooking spray.
  7. Bake for 10 minutes, then flip the tots over and bake for another 10-15 minutes.
  8. Serve hot.
