Base
- 2 cups Almond Flour
- 3 tablespoons Coconut Flour
- ¼ cup Erythritol
- ¼ cup Pecans finely chopped
- ½ teaspoon Xanthan Gum
- 1 teaspoon Baking Powder
- 4 ounces Salted Butter melted
- 1 teaspoon Vanilla Essence
- 2 large Eggs
Topping
- 2 large Eggs
- ⅓ cup Erythritol
- ⅓ cup Sugar-Free Maple Syrup
- 3 tablespoons Salted Butter melted
- 1 teaspoon Vanilla Essence
- 1 ½ cups Pecans roughly chopped
Instructions
- Preheat your oven to 175C/350F. Line a 9in square pan with parchment paper and set aside.
- Place the almond flour, coconut flour, erythritol, pecans, xanthan gum, and baking powder into a mixing bowl. Mix well.
- Add the butter, vanilla, and eggs and mix well.
- Spoon into the base of your prepared pan and spread out evenly.
- Bake for 15 minutes, until the edges are golden brown.
- Set aside to cool.
- In a mixing bowl, add the eggs, erythritol, maple syrup, butter, and vanilla.
- Whisk together, until well mixed.
- Spread the pecans over the cooked based and pour over the egg mixture.
- Bake for 20-25 minutes until the topping is set.
- Leave to cool in the pan for 30 minutes.
- Slice and enjoy!
