Ingredients

  • 2 ½ cups Unsweetened Desiccated Coconut
  • 1 ½ cups Coconut Milk full fat
  • ½ cup Erythritol
  • ⅓ cup Coconut Flour
  • 2 large Eggs
  • 1 teaspoon Vanilla Essence

Instructions

  1. Preheat oven to 175C/350F. Prepare a large cookie sheet by lining with parchment paper.
  2. Add all ingredients to a large mixing bowl. Mix well into a thick batter.
  3. Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.
  4. Bake for 15-20 minutes, until lightly browned.
  5. Leave to cool on the tray. Enjoy your cooled cookies or store in an airtight container for later.
