Ingredients
- 2 ½ cups Unsweetened Desiccated Coconut
- 1 ½ cups Coconut Milk full fat
- ½ cup Erythritol
- ⅓ cup Coconut Flour
- 2 large Eggs
- 1 teaspoon Vanilla Essence
Instructions
- Preheat oven to 175C/350F. Prepare a large cookie sheet by lining with parchment paper.
- Add all ingredients to a large mixing bowl. Mix well into a thick batter.
- Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.
- Bake for 15-20 minutes, until lightly browned.
- Leave to cool on the tray. Enjoy your cooled cookies or store in an airtight container for later.
