Ingredients

  • 1 cup Almond Flour
  • 1 cup Unsweetened Desiccated Coconut finely shredded
  • ⅓ cup Powdered Erythritol
  • 1 Lemon zest only
  • 2 tablespoons Lemon Juice
  • 3.5 ounces Cream Cheese softened
  • 1 teaspoon Vanilla Essence
  • ⅓ cup Unsweetened Desiccated Coconut for coating

Instructions

  1. In a mixing bowl, add the almond flour, coconut, and sweetener. Mix together.
  2. Add the remaining ingredients, except the extra coconut, and mix into a thick dough.
  3. Take tablespoon-sized pieces of dough and roll into balls.
  4. Roll each of the balls through the extra coconut and place onto a cookie sheet.
  5. Place in the fridge for 15 minutes before enjoying!
