This Keto Almond Biscotti is a delicious sugar-free Italian cookie. This tasty gluten-free snack is perfect with coffee or tea, whether morning or afternoon. These twice baked cookies are just divine.

Ingredients

  • 9 ounces Almond Flour
  • 1 cup Almonds whole, skin on
  • ½ cup Erythritol
  • 1 ½ teaspoons Baking Powder
  • ¼ teaspoon Xanthan Gum
  • Pinch Salt
  • 3 large Eggs
  • 1 tablespoon Unsalted Butter melted
  • 2 teaspoons Vanilla Essence

Instructions

  1. Preheat oven to 180C/355F. Line a cookie sheet with parchment paper and set aside.
  2. In a mixing bowl, add the almond flour, almonds, erythritol, baking powder, xanthan gum, and salt. Mix well.
  3. Add the eggs, butter, and vanilla and mix into a sticky dough.
  4. Form the dough into a rectangle about 2.5cm1in thick.
  5. Bake for 20-30 minutes until lightly browned and firm to the touch.
  6. Leave to cool completely.
  7. Reduce oven temperature to 150C/300F. Line a new cookie sheet with parchment paper.
  8. Carefully slice the loaf into thin slices, you should get around 20 slices. If your loaf is crumbling it may be too warm, place in the freezer for 30 minutes before slicing.
  9. Place the slices onto the cookie sheet and bake for 20-25 minutes, until the slices are browned and crispy. Leave to cool completely before enjoying.
